Recipes for Diabetes: Emerald Dip

Managing diabetes and sticking to a weight loss plan during this time of year can be difficult. Fortunately, with a little forethought and some good Tupperware, you can bring your own healthy options to your next holiday get-together. Serve this dip with sliced veggies and you, your friends, and your waistline will thank you.healthy spinach dip

Emerald Dip
Makes 3 cups

1 10-ounce package frozen chopped spinach
1 cup low-fat mayonnaise
1 cup low-fat sour cream
½ cup fresh parsley, chopped
½ cup green onions, chopped
1 clove garlic, peeled and minced
½ teaspoon salt substitute
¼ teaspoon ground pepper

Thaw spinach, drain, and squeeze moisture out until dry.

Combine spinach with remaining ingredients in a medium bowl and mix well.

Cover and refrigerate at least two hours or overnight.

Stir before serving. If you need to thin, add 1–2 tablespoons of low-fat milk.

Nutritional information per serving (1/4 cup): calories: 103; total fat: 10 grams; cholesterol: 15 mg; sodium: 181 mg; carbs: 4 grams; fiber: 1 grams; protein: 1 gram
