Garlicky Spinach
Serves 4
8 cups (1 large bunch) fresh spinach
1 teaspoon extra-virgin olive oil
2 cloves garlic, peeled and minced
Wash spinach well and remove tough stems.
In a large non-stick skillet, heat olive oil over medium-high heat. Add minced garlic and cook, stirring for 1 minute.
Add spinach to the skillet and cook, stirring constantly and pushing uncooked spinach toward the bottom of the skillet. Cook until all spinach has wilted, 3 to 4 minutes.
