Recipes for Diabetes: Grilled Vegetables

Memorial Day CookoutThis weekend is Memorial Day, which means that many of us are going to be hosting or attending barbecues—events that can make diabetes management difficult. While everyone else is gobbling down carbohydrate-filled chips and other snacks, I recommend that you make yourself an appetizer of grilled vegetables.

 

This delicious recipe is extremely easy to make, and it lets you enjoy the festivities without raising your blood sugar, or expanding your waistline.

 


Grilled Vegetables

(Serves 4)

 

Ingredients

1 pound raw eggplant or 3 pounds raw zucchini
1 tablespoon extra-virgin olive oil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme

 

Directions

Preheat the broiler or prepare charcoal grill. Wash and pat the vegetables dry with paper towels. Do not peel vegetables. Slice vegetables and lightly coat both sides of each slice with olive oil. Sprinkle one side of vegetable slices with oregano and thyme. Broil or grill the vegetable slices 2 to 4 minutes on each side. Serve hot or at room temperature.
